Lets start with one medium sized banana plus an egg (I usually use 3 of each for 2 portions).
I love to add a little bit of coriander for a different taste but feel free to add your favorite spice or nothing.
Cook it on a medium-low heat as you would normally cook pancakes. I choose cast iron skillet with grass fed ghee or organic coconut oil.
They cook beautifully even better than traditional flour based pancakes.
Maple syrup is a perfect finish for this treat; add some berries for a raw vitamin bite!
